Dandelion Greens & Cannelini Bean Soup

2 oz. pancetta, diced
1 medium onion, chopped
4 cloves garlic, minced
2 tbsp tomato paste
1 15 oz can cannellini beans, drained
1 15 oz can diced tomatoes
1 32 oz box chicken broth
7 oz (about 8 cups) dandelion greens, washed and chopped
1/2 cup parsley, chopped
Salt and pepper to taste


Sauté the pancetta in a tablespoon of olive oil until golden. Add in onion and sauté 2-3 minutes, until tender. Add in garlic and tomato paste, mixing well, and sauté another 2 minutes stirring frequently. Add in the rest of the ingredients and simmer for about 20 minutes. Season with salt and pepper to taste.

Serves 4-6
